Drowned Tortas from Jalisco

Drowned tortas from Jalisco are a very popular Mexican snack.   • 1 liter water
  • 5 tomatoes
  • 10 dried árbol chiles
  • 1 onion, cut into pieces
  • 3 cloves garlic
  • 1/4 cups vegetable oil
  • 1 leaf bay
  • 1 pinch oregano
  • 1 pinch clove
  • 1 pinch cumin
  • 1 pinch salt
  • 6 bolillo rolls, or birote
  • 1/2 kilos pork carnitas
  • 1 cup red onion, for accompaniment (pickled)
  • red salsa, for accompaniment

  • In a small pot, heat the water and cook the tomatoes with the árbol chili, onion, and garlic.
  • Blend the previous preparation with a little liquid.
  • Heat a small pot over medium heat with the oil and sauté the previous preparation, add the bay leaf, oregano, clove, cumin, season with salt to your taste, and cook for 5 more minutes to thicken slightly. Set the sauce aside.
  • On a cutting board, cut the birotes, remove some of the crumb, and fill with the carnitas. Serve the torta on a plate and cover with the sauce. Add some red onions and red sauce for accompaniment. Enjoy.
