Easy Chicken Pozole

Delicious guilt-free red chicken pozole, accompanied by lettuce, radishes, lime, and avocado. Ideal for sharing with family as it is very filling and economical.

1 cup hominy corn
1 kilo chicken breast
1/2 onions
1/4 bunches cilantro
2 guajillo chiles
1 ancho chile
1 pasilla chile
salt
lettuce, in strips, for accompaniments
radish, in rounds, for accompaniments
lemon , in halves, for accompaniments
oregano , for accompaniments
avocado, in slices, for accompaniments

In a pot with water, cook the hominy for 1 hour or until soft. Set aside.
In a pot with water, add the chicken breast, onion, and cilantro and cook for 30 minutes or until cooked. Remove the onion and cilantro and set aside.
On a cutting board, shred the chicken.
Roast the chiles, onion, and garlic on a griddle for 5 minutes.
Blend the guajillo chile, ancho chile, onion, and garlic and pour into the chicken broth.
Add the shredded chicken and season with salt. Cook for 20 minutes.
Serve with lettuce, radishes, limes, oregano, and avocado. Enjoy.
