The chicken is washed, the skin is removed, seasoned with salt and pepper, and browned in olive oil.
Sherry, water, vinegar, and salt to taste are added.
In a small piece of cloth, the peppercorns, garlic, and cloves are placed, tied with a string, crushed with the pestle, and added to the chicken.
The slices of chilies and raisins are added.
The potatoes are cooked separately, and when they are cooked (slightly firm), they are removed, drained, and added to the chicken.
It is allowed to dry a bit and served with white rice.
