  • 2 tablespoons olive oil
  • 2 guajillo chiles, cut into strips
  • 6 chicken thighs, skinless
  • 6 chicken drumsticks, skinless

  • 1 tablespoon garlic powder
  • 1 cup chicken broth
  • lemons, sliced
  • broccoli, steamed, for serving
  • bell pepper, roasted, for serving

  • Heat olive oil in a skillet over medium heat and fry the strips of guajillo chili. Remove from the skillet and set aside.
  • Sear the chicken pieces in the same skillet where you fried the chiles, season with salt and sprinkle with garlic powder, add one cup of chicken broth, cover and cook for 20 minutes over medium heat.
  • Serve in a cast iron skillet, decorated with slices of yellow lemon and strips of guajillo chili accompanied by roasted broccoli and bell peppers.
