Garlic Roasted Chicken

This delicious recipe combines flavorful roasted chicken with garlic and spices. The garlic sauce is a spectacular sauce that you can save and use for other dishes.

  • 2 kilos chicken
  • 6 leaves thyme
  • 1/2 tablespoons salt
  • 1/4 tablespoons pepper
  • 35 cloves garlic
  • 1 cup chicken broth

  • Preheat the oven to 230 degrees Celsius (450 degrees Fahrenheit).
  • Take the chicken and remove the neck and giblets from the inside. Pat the chicken dry with paper towels.
  • Using your hands, gently separate the skin from the meat (pulling it a little at a time) being careful not to tear it.
  • Place a thyme leaf inside the skin of each breast and the remaining leaves inside the cavity of the chicken.
  • Season the chicken with salt and pepper.
  • Place the chicken in a roasting pan; if you don’t have one, place it on a rack with a pan underneath to catch the juices and keep your oven clean.
  • Roast the chicken for 30 minutes.
  • Remove from the oven and add the unpeeled garlic cloves to the dish and roast for another 30 minutes.
  • Check with a knife to ensure the chicken is cooked and remove from the oven.
  • Put the chicken on a platter and transfer the garlic to a deep dish. Peel the garlic and return it to the roaster with the cup of chicken broth. Heat for another 15 minutes in the oven and remove.
  • With a spoon, crush the garlic cloves and place the sauce in a sauceboat.
