This delicious recipe combines flavorful roasted chicken with garlic and spices. The garlic sauce is a spectacular sauce that you can save and use for other dishes.
Preheat the oven to 230 degrees Celsius (450 degrees Fahrenheit).
Take the chicken and remove the neck and giblets from the inside. Pat the chicken dry with paper towels.
Using your hands, gently separate the skin from the meat (pulling it a little at a time) being careful not to tear it.
Place a thyme leaf inside the skin of each breast and the remaining leaves inside the cavity of the chicken.
Season the chicken with salt and pepper.
Place the chicken in a roasting pan; if you don’t have one, place it on a rack with a pan underneath to catch the juices and keep your oven clean.
Roast the chicken for 30 minutes.
Remove from the oven and add the unpeeled garlic cloves to the dish and roast for another 30 minutes.
Check with a knife to ensure the chicken is cooked and remove from the oven.
Put the chicken on a platter and transfer the garlic to a deep dish. Peel the garlic and return it to the roaster with the cup of chicken broth. Heat for another 15 minutes in the oven and remove.
With a spoon, crush the garlic cloves and place the sauce in a sauceboat.
