  • 3 chipotle chiles in adobo sauce
  • 3 cups orange juice, natural
  • 1/4 cups lime juice
  • 1 tablespoon cumin
  • 1/2 tablespoons achiote
  • 1 tablespoon vegetable oil
  • 1 tablespoon orange zest
  • 1/2 cups artificial sweetener
  • 1 stick cinnamon
  • 2 cloves
  • 1 pork leg, boneless
  • salt

  • 6 garlic, roasted
  • 1 tablespoon vegetable oil, to sear the leg

  • Preheat the oven to 200°C.
  • Blend the chipotle pepper with orange juice, lime juice, cumin, and achiote.
  • Heat oil in a saucepan over medium heat, pour in the previous preparation, and add the orange zest, sugar substitute, cinnamon, and cloves. Cook until the sauce thickens. Strain if necessary.
  • Using a knife, poke the pork leg with roasted garlic, season with salt and pepper, and tie with string to maintain its shape. Baste with the sauce, cover with aluminum foil.
  • In a high heat skillet with oil, sear the leg on all sides. Transfer to a baking dish and baste with the sauce. Cover with aluminum foil.
  • Bake the pork leg for 2 hours and constantly baste with the sauce to glaze it. Remove from the oven and let it rest for 10 minutes before slicing.
  • Slice and serve with the remaining sauce. Accompany with mashed potatoes.
