Grandma's Tinga Recipe

  • 1 chicken breast
  • 4 tomatoes
  • 1 onion
  • 2 sprigs thyme
  • 2 leaves bay
  • 1 pinch oregano
  • 4 chipotle chiles in adobo sauce
  • 2 cloves garlic
  • salt and pepper

  • Cook the chicken breast with 1 clove of garlic and salt.
  • Slice the onion into julienne strips. Finely chop the tomato and the remaining clove of garlic.
  • Once the chicken breast is cooked, shred it well.
  • In a pot, add the onion, tomato, garlic, and let it cook well.
  • Season with thyme, oregano, bay leaf, salt, and pepper to taste.
  • Add the chicken and chipotle peppers, cook for an additional 15 minutes so that the ingredients blend well. Serve.
