Green Pipian

Shredded chicken in a sauce made from pumpkin seeds, tomatillo, and herbs.

  • 200 grams pumpkin seeds
  • 8 tomatillos
  • 1 bunch fresh cilantro, fresh
  • 8 leaves parsley, fresh
  • 4 leaves lettuce
  • 10 leaves radish
  • 1/2 onions
  • 4 cloves garlic
  • 1 cup chicken broth
  • 10 leaves basil
  • 4 serrano chiles
  • salt
  • 4 chickens, large boiled and shredded
  • vegetable oil

  • Toast the pumpkin seeds in a little oil. Remove and blend in the blender.
  • In a large skillet, heat 3 tablespoons of oil and add the pumpkin seeds, chopped onion, and chopped garlic.
  • Once well browned, add the tomatillo, cilantro, parsley, lettuce, radish leaves, basil, and chopped serrano chili. Cook and season with salt.
  • Blend all the sauce in the blender and gradually add the broth until reaching the desired stew consistency.
  • Return to the skillet and add the chicken. Cook for 10 minutes and serve.
