Grilled Lemon Chicken Breasts with Bell Pepper Pico de Gallo

  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 1 tablespoon chile powder
  • 5 limes, just the juice
  • 2 chicken breasts
  • 3 tablespoons olive oil
  • 2 red bell peppers, diced into cubes
  • 4 tablespoons white onion, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 pinch oregano
  • pinches salt and pepper

  • In a baking dish, place onion powder, garlic powder, chili powder, lemon juice, and mix until combined, add the chicken breasts and let marinate for 15 minutes.
  • On a medium grill, place the chicken breasts, grill for 5 minutes on one side and 5 minutes on the other side, continue grilling until cooked through.
  • For the sauce, in a bowl add olive oil, red bell pepper, red onion, and cilantro, season with a pinch of oregano, salt, and pepper.
  • Serve the chicken breast topped with pico de gallo.
