Ground Beef Empanadas in the Shape of a Football

Making ground beef empanadas will be a lot of fun with this original recipe for the sports season. With an amazing shape of an American football, these ground beef empanadas will be the perfect snack for your Super Bowl gatherings, with a delicious spicy filling of ground beef and bacon with a touch of oregano.

  • 6 slices smoked bacon, finely chopped
  • 4 tablespoons onion, finely chopped
  • 1 clove garlic
  • 300 grams ground beef
  • 1/4 cups tomato purée
  • 1 bell pepper, diced
  • 2 chipotle chili in adobo Great Value ®, ground
  • 1 teaspoon oregano
  • 1 teaspoon Great Value® plain salt
  • 1/2 teaspoons pepper
  • 2 packages Extra Special Goat Cheese® Fine Herbs
  • 1 egg, beaten, for brushing

  • Preheat the oven to 180°C.
  • For the filling, in a medium skillet, cook the bacon over medium heat until golden but still soft. Remove the excess fat and cook the onion and garlic in the same pan.
  • Add the ground beef and cook for about 10 minutes or until cooked through.
  • Add the tomato puree and the peppers. Cook for 5 more minutes. Incorporate the chipotle pepper, oregano, and season with salt and pepper. Cool.
  • Roll out the empanada discs and cut into the shape of American footballs; use the excess to make decorations.
  • Assemble the empanadas by spreading a little goat cheese on one of the bases and placing some of the meat filling. Brush the edges with egg and cover with another base. Repeat until the filling is finished.
  • Brush the empanadas completely with egg and attach the decorations, so they look like American footballs. Brush with egg again.
  • Place on a greased baking tray and bake for about 20 minutes or until golden brown. Serve immediately. Buy HERE
