Hamburger Skewers

  • 1 cup pancake mix
  • 3/4 cups milk, for the pancake mixture
  • 1 tablespoon butter, melted, for the pancake mixture
  • 1 egg, for the pancake mixture
  • 1 tablespoon butter, for the pancakes

  • 1/2 cups onion, finely chopped, for the meat
  • 1 tablespoon garlic powder, for the meat
  • 1 tablespoon paprika, for the meat
  • 1 tablespoon cornstarch, for the meat
  • 1/2 cups McCormick® mayonnaise, for the meat
  • 1/4 cups cuaresmeño chile, grated, for the meat
  • 1/4 cups parsley, finely chopped, for the meat
  • 1 egg, for the meat
  • 1/2 cups breadcrumbs, for the meat

  • 1 cup butterhead lettuce, leaves cut into medium squares
  • 1 cup bacon, cut into medium squares and fried
  • 1 cup cheddar cheese, sliced into medium squares
  • 1 cup cherry tomato

  • For the pancakes, blend the pancake mix with the milk, melted butter, and egg until fully combined.
  • In a non-stick pan, melt a bit of butter, pour a tablespoon of the mixture, and form a pancake, cooking on both sides over medium-low heat. Remove the pancake from the pan, place it on a flat surface, and using a cutter, cut circles 3 centimeters in diameter. Repeat until you finish with the batter and keep warm.
  • For the meat, in a bowl mix the ground beef with the onion, garlic powder, paprika, cornstarch, cuaresmeño chili, parsley, egg, breadcrumbs, and McCormick® Mayonnaise. Season with salt and pepper, and mix until you obtain a manageable mixture.
  • Take a bit of the meat mixture and using your hands, form small balls, then flatten to create a disk 3 centimeters in diameter; it should not be too flat, and the more volume it has, the better the shape will be. Repeat until you finish with the meat.
  • In a pan with hot oil, fry the meat over medium-low heat, cooking on both sides until sufficiently browned. Drain on paper towels and keep warm.
  • To form the hamburger skewers, insert a piece of pancake onto a wooden skewer, followed by a square of lettuce, fried bacon, a piece of meat, a square of cheddar cheese, and another circle of pancake. To finish, place half a cherry tomato. Repeat until finished. Serve with your favorite dressing.
