Recipe for Pork in Green Sauce with Potato Beet Puree.

  • 1 kilo pork
  • 5 green tomatoes, cooked
  • 7 Jalapeño chiles, cooked
  • 5 serrano chiles, cooked
  • pepper, to taste
  • potatoes, cooked
  • unsalted butter
  • mayonnaise
  • garlic
  • oregano , to taste
  • 1 cube chicken broth
  • salt , to taste

  • cut the meat into small pieces, sauté the garlic in a pan with oil, and once the garlic is ready, add the meat to brown it.
  • add pepper, salt, and oregano. let it brown to the point that it cooks in its own juice.
  • blend the tomatillos with the chiles, adding salt and oregano, and once the meat is ready, add it, tasting to ensure it’s not too spicy.
  • let it simmer for about 5 minutes on low heat, making sure it doesn't dry out too much.
  • peel the potatoes and mash them to make a potato puree, add mayonnaise and butter with salt and pepper, checking the flavor to adjust.
  • serve the stew with a considerable portion of the puree.
