800 grams beef tripe, washed

5 cloves garlic
6 tomatoes
10 guajillo chiles, cleaned
2 sprigs epazote
1 teaspoon salt
4 tablespoons onion, finely chopped, to accompany
1 teaspoon oregano, to accompany
10 corn tortillas, to accompany

Cook the pancita in a pot with water, onion, and garlic covered for about 20 minutes.
In a small pot over medium heat, cook the tomatoes with the guajillo chili for about 15 minutes.
Blend the previous preparation. Add to the pancita along with a sprig of epazote. Continue cooking for about 20 minutes. Season with salt.
Serve the pancita with oregano, chopped onion, and accompany it with corn tortillas.
