Homemade Menudo

Prepare this delicious pancita made with guajillo chili. It’s spicy and tasty, and you can accompany it with freshly made corn tortillas and a cold beer or agua fresca. Surprise your family with this delicious recipe.

  • 800 grams beef tripe, washed
  • 1 onion
  • 5 cloves garlic
  • 6 tomatoes
  • 10 guajillo chiles, cleaned
  • 2 sprigs epazote
  • 1 teaspoon salt
  • 4 tablespoons onion, finely chopped, to accompany
  • 1 teaspoon oregano, to accompany
  • 10 corn tortillas, to accompany

  • Cook the pancita in a pot with water, onion, and garlic covered for about 20 minutes.
  • In a small pot over medium heat, cook the tomatoes with the guajillo chili for about 15 minutes.
  • Blend the previous preparation. Add to the pancita along with a sprig of epazote. Continue cooking for about 20 minutes. Season with salt.
  • Serve the pancita with oregano, chopped onion, and accompany it with corn tortillas.
