  • 500 grams ground chicken
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon fresh cilantro, finely chopped

  • 2 cups tomatillo, cut into quarters
  • 2 cloves garlic
  • 2 morita chiles, deveined and seedless
  • 1 cup chicken broth
  • 1 sprig fresh cilantro
  • 1/4 tablespoons cumin, whole
  • 1 tablespoon olive oil
  • chervil, to accompany

  • Mix the ground chicken with garlic powder, onion powder, parsley, cilantro, and season with salt and pepper.
  • Using your hands, shape the meatballs and set aside.
  • Heat the oil over medium heat in a saucepan and fry the tomatoes, garlic, and chiles for 5 minutes. Add the chicken broth, cilantro, and cumin, and cook for 5 minutes. Let it cool slightly.
  • Blend the previous preparation until you obtain a smooth sauce.
  • Fry the sauce again with a little more oil and cook for 10 minutes over medium heat, add the meatballs, cover, and cook until the meatballs are cooked through.
  • Serve the meatballs and garnish with parsley.
