Kale-Stuffed Chicken, Goat Cheese with Honey and Ginger Dressing

Try this deliciously juicy chicken breast, stuffed with a rich mixture of kale, greens, blueberries, and a touch of goat cheese. It is accompanied by a creamy honey and ginger sauce. Ideal for lunchtime.

  • 1 bag Eva® mighty ginger salad
  • 4 chicken cutlets
  • salt and pepper
  • 4 teaspoons vegetable oil
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 cup whipping cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter

  • In a bowl, mix the goat cheese, flaxseed, and blueberries from the Mighty Ginger Salad Eva® bag. Reserve the Eva® honey-ginger dressing.
  • Place a little of the cheese mixture on top of the cutlets. Add kale and lettuce from the salad bag.
  • Roll up the cutlets and secure with a wooden toothpick. Season with salt and pepper.
  • In a pan over medium heat, heat the oil and fry the chicken cutlets until golden and cooked through. Set aside.
  • For the sauce, blend the onion with the garlic, heavy cream, mustard, and the reserved Eva® honey-ginger dressing.
  • In a medium saucepan, melt the butter and add the sauce. Cook for about 5 minutes and adjust seasoning.
