Classic Lamb Rack recipe, the flavor of these chops will delight you. Prepare them and pamper those you love the most. This recipe will impress all your guests and they will want to ask for the recipe.
Cut the Rack to obtain two equal parts (2 pieces each with 6 ribs). Remove excess fat, always leaving a thin layer of fat on the outside, which will help keep the meat moist.
Sprinkle salt covering the fat of the chops.
In a hot skillet, add olive oil and sauté the garlic and shallots.
Sear the chops on all sides, about 1 minute per side. Remove the chops from the skillet. (Leave the salt in the skillet)
Add paprika, sumac, mint, pepper, and any spices you like to the chops. You can also place a bed of herbs under the chops and infuse the chops during cooking.
Place the chops standing and interleaved (see photo) in a baking dish. Drizzle half of the leftover oil from the skillet over the racks in the dish (Do not let the garlic and shallots brown too much).
Bake for 30 minutes.
Remove from the oven, cut the chops individually, and serve.
