Roasted lamb leg

  • 1 cup Extra Virgin Olive Oil Inés®
  • 3 tablespoons garlic, finely chopped
  • 2 tablespoons thyme
  • salt
  • pepper
  • 1/4 cups raw sugar
  • 1 lamb leg
  • 2 cups new potatoes
  • 2 cups carrot
  • 2 cups white wine

  • In a bowl, mix Inés® Extra Virgin Olive Oil, garlic, thyme, salt, pepper, and brown sugar until perfectly combined.
  • Season the lamb leg and brush with the oil mixture until fully covered.
  • In a baking tray, place a little Inés® Extra Virgin Olive Oil, the potatoes, and the carrots. Season with salt and pepper, and pour the white wine.
  • Place the lamb leg on top of the vegetables, cover with aluminum foil, and bake at 200 °C for 3 hours. Baste the leg with the juices it releases every 20 minutes.
