Leg with Achiote and Orange Marinade

  • 1 box Del Fuerte® Ground Tomatoes, 210 g each
  • 5 guajillo chiles, cleaned and soaked
  • 1/4 achiote
  • 1 cup orange juice
  • 1/2 heads garlic, roasted
  • 2 cloves, roasted
  • 1/4 sticks cinnamon, grilled
  • 1/4 teaspoons cumin, roasted
  • salt

  • 1 pork leg, 4 kg
  • 1 cup almonds, for stuffing the meat
  • 1 cup prunes, for stuffing the meat
  • 6 cloves garlic, for stuffing the meat
  • orange, sliced

  • Blend Del Fuerte® Crushed Tomatoes with the guajillo chili, achiote, orange juice, garlic, cloves, cinnamon, cumin, and season with salt and pepper. Set aside.
  • Place the leg on a cutting board and make small incisions in the meat with a knife, then insert the almonds and prunes, and use a cotton thread to tie the meat so it retains its shape during cooking. Place the leg in a deep baking dish and set aside.
  • Pour the marinade over the leg, cover with aluminum foil, and bake at 180 °C for 90 minutes. Let the marinated leg rest for 15 minutes before slicing.
  • Slice the holiday leg, place it on a platter, and decorate with orange slices.
