Lemon Chicken with Cauliflower Rice

  • 90 grams boneless chicken breast
  • 2 lemons
  • 1/4 onions
  • 4 tablespoons parsley
  • 1 teaspoon salt
  • 1 teaspoon allspice berry
  • 1 tablespoon extra virgin olive oil
  • 1 cup cauliflower, in bits
  • 1 clove garlic, finely chopped (for Eva® Cauliflower Bits rice)
  • 2 tablespoons onion, finely chopped (for Eva® Cauliflower Bits rice)
  • 1 teaspoon extra virgin olive oil

  • In a food processor, process the cauliflower until you achieve a rice consistency.
  • In a medium skillet, heat the olive oil and sauté the onion and garlic. Add the cauliflower and cook for a few minutes or until tender, season with salt and pepper. Set aside.
  • In a medium skillet, heat the oil, add the onion, garlic, and cook for 2 minutes. Add the chicken, cook on both sides, add the lemons and lemon juice, and let cook for 15 minutes or until cooked through.
  • On a plate, place a bed of cauliflower rice and the chicken breast with the lemons, and garnish with chopped parsley.
