  • 1 pork loin, Amara
  • 2 garlic
  • 4 grams pepper
  • 2 carrots
  • 2 onions
  • 1/4 leeks
  • 10 grams parsley
  • 500 milliliters red wine
  • 50 grams flour
  • 40 grams butter
  • 500 milliliters water
  • 1 beef broth, in cube
  • 3 slices bacon, finely chopped
  • 6 white mushrooms
  • 6 new potatoes

  • Cut the meat into thick strips or slices.
  • Put the seasoned meat in a bowl. Add parsley, leek, garlic, onion, and carrot cut into strips.
  • Add the wine. Let it marinate for a few hours.
  • In a skillet, melt the butter over low heat; meanwhile, remove the meat and lightly coat it with flour. Sear in the skillet until browned and set aside.
  • In the same skillet, add a bit more butter and sauté the marinating vegetables. Wait until they are browned.
  • Incorporate the meat and give it a couple of turns.
  • Add the marinating wine and let it boil over high heat. Wait for the sauce to thicken.
  • Add water with the broth cube and cook over medium heat for 10 to 15 minutes.
  • In a separate pan, prepare the garnish. Sauté half an onion, bacon, mushrooms, and potatoes until browned.
  • Place in a deep plate and serve immediately.
