Marinated Wings with Esquites

These delicious marinated wings, besides having a delightful spiciness, are accompanied by some golden esquites. The combination couldn't be more perfect; it's ideal for barbecues, celebrations, or parties with friends. You will love making them!

  • 1/2 cups onion, finely chopped, for the esquites
  • 1 cup bacon, finely chopped, for the esquites

  • For the esquites, in a saucepan with hot vegetable oil, sauté the onion until it begins to take on a shiny hue, add the bacon, and brown without stopping to stir.
  • Add the yellow corn, tree chili, and cilantro; season with salt and pepper. Cook for 15 minutes. If you notice the corn starts to stick to the pot, add a little water; this will help keep the corn soft inside but crunchy outside. Set aside.
  • In a large bowl, place the wings, add garlic powder, paprika, cumin, guajillo powder, pepper, enough salt, and vegetable oil. Mix until the spices are integrated with the chicken pieces. Marinate for 20 minutes in the refrigerator.
  • In a skillet with hot vegetable oil, fry the wings over medium-low heat. Drain on paper towels. Set aside.
  • For the marinade, in a bowl, mix sour cream, butter, and hot sauce, incorporating with the help of a whisk.
  • In a deep skillet, pour the marinated sauce, add the wings, and submerge them in the marinade. Cook for 10 minutes over low heat.
  • Serve the wings, add fried esquites to taste, and garnish with cilantro. Serve with guacamole.
