Meat Bundt with Bacon

An economical meat recipe is this Meat Bundt with Bacon, which is also generous and very original. This meat recipe is wrapped in bacon and filled with boiled egg, so we recommend adding a bit of vinegar to prevent the egg from breaking.   • 1 tablespoon white vinegar
  • 500 grams ground meat, beef
  • 500 grams ground meat, pork
  • 1/2 cups onion, finely chopped
  • 1/2 cups peas
  • 1/2 cups corn kernels
  • 1/2 cups carrot, diced
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon mustard
  • 1/2 cups BBQ sauce
  • 2 tablespoons parsley, finely chopped
  • salt and pepper
  • 20 slices bacon
  • BBQ sauce, for brushing
  • cherry tomato, for decoration
  • chervil, for decoration

  • Preheat the oven to 180°C.
  • Place the Huevo San Juan® pieces in a small pot, add water to cover the eggs and a bit of vinegar; heat over medium heat. Once it starts to boil, cook for 10 minutes. Remove from heat and cool the pieces under a stream of cold water.
  • Peel the Huevo San Juan® pieces and set aside.
  • In a bowl, mix the ground beef with the ground pork, onion, peas, corn kernels, carrot, garlic, mustard, BBQ sauce, and parsley. Season with salt and pepper.
  • In a bundt pan, place the strips of bacon to completely cover the bottom, add half of the meat; using a spoon, create a groove and place the Huevo San Juan® pieces. Cover with the remaining meat, cover with aluminum foil, and bake for 40 minutes.
  • Unmold the bundt on a tray and drain the meat juices. Brush the bacon with BBQ sauce and return to the oven for another 20 minutes or until the bacon is golden.
  • Place the bundt on a platter, decorate with cherry tomatoes and parsley.
