Meatloaf for Christmas

This delicious meatloaf is juicy and perfect for the holiday season. It contains raisins and a blend of spices that make it irresistible. Moreover, it serves well for the whole family.

  • 2 tablespoons vegetable oil
  • 1/4 onions, finely chopped
  • 1 garlic, finely chopped clove
  • 1 cup spinach
  • 750 grams ground meat, beef
  • 1/2 cups raisins
  • 1/2 teaspoons ginger, grated
  • 1/2 teaspoons cinnamon powder
  • 1/2 cups breadcrumbs
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 tablespoons vegetable oil
  • 1 onion, for caramelized onion
  • 1 tablespoon sugar, for caramelized onion
  • 1/4 cups tomato sauce, for decoration
  • 1 tablespoon parsley, for decoration

  • Preheat the oven to 180°C.
  • In a medium skillet, cook the onion with the oil until translucent. Add the garlic and cook for one more minute. Add the spinach and cook for 3 minutes, letting all the liquid evaporate.
  • In a large bowl, mix the sautéed spinach with the meat, raisins, spices, bread, egg, and season with salt and pepper.
  • Place the mixture in a loaf pan, cover with aluminum foil, and bake until cooked, about 1 hour. Cool slightly and unmold.
  • For the caramelized onions, heat the oil in a skillet over low heat and sauté the onion. Add the sugar and cook until caramelized, about 10 minutes. Set aside.
  • Glaze the meatloaf with tomato sauce and decorate with onions and parsley sprigs.
