Mini Meatloaf with Bacon

  • 1 kilo ground beef
  • 1/2 cups breadcrumbs
  • 1 egg
  • 1 cup onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 4 tablespoons ketchup
  • 1 tablespoon mustard
  • 2 teaspoons parsley, finely chopped
  • salt

  • 12 slices bacon
  • ketchup, for brushing
  • parsley, for decoration

  • Preheat the oven to 180° C.
  • In a bowl, mix the ground beef with the breadcrumbs, egg, onion, garlic, ketchup, mustard, parsley, salt, and pepper.
  • Take approximately 150 g of the meat mixture and shape it into a circle with your hands. Wrap with bacon and place on a greased baking tray or lined with parchment paper. Brush the surface of the mini loaves and the bacon with ketchup.
  • Bake for 15 minutes or until the meat is cooked and the bacon is golden brown.
  • Serve with parsley, accompanied by salad and pasta.
