This chicken recipe is light and very tasty thanks to the combination of vegetables, white wine, and mint flavor. A perfect dish for any occasion that everyone will surely love.
In a pot with 2-3 cups of water and salt, cook the green beans for 5 minutes or until slightly tender. Drain the green beans and place them under cold water to stop the cooking.
Place the flour on a plate and coat the chicken cubes in the flour.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and cook for 5-6 minutes.
Add the white wine, season with salt and pepper, and continue cooking until the wine has evaporated and the chicken is fully cooked (5 more minutes). Remove from heat.
In a blender, mix 1/4 cup of olive oil, the mint, the almonds, 1 tablespoon of water, and 1/2 teaspoon of salt. Blend until smooth.
Mix the chicken with the green beans, cherry tomatoes, and place on serving plates.
With a spoon, place the mint pesto over the chicken and vegetables. Serve.
