Mojo Chicken

These delicious breasts are prepared in a traditional Cuban way, with garlic mojo and a hint of lemon. It's a dish where the chicken remains very juicy and has a flavor that will make you want to keep eating it. You can serve them with some white rice.

  • 4 chicken breasts, skinless and boneless
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon vegetable oil
  • 1 teaspoon butter
  • 4 cloves garlic
  • 3/4 cups chicken broth
  • 2 teaspoons lime juice
  • 1 teaspoon fresh cilantro, chopped
  • 2 limes

  • Place the chicken breasts inside a plastic bag and flatten them with a hammer or meat mallet.
  • Season the flattened breasts with salt and pepper to taste.
  • Heat the oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5 minutes on each side (until the chicken is well done). Remove the breasts from the skillet and keep them on a covered plate.
  • In the skillet, melt butter over medium heat. Add the garlic and sauté for 1 minute. Add the broth and bring to a boil. Cook until the broth has reduced by half, about 5 minutes.
  • Remove the pan from the heat and add the lemon juice.
  • On a serving platter, arrange the chicken breasts and pour the butter, garlic, and lemon sauce over them. Garnish with cilantro and lemon wedges.
