These delicious breasts are prepared in a traditional Cuban way, with garlic mojo and a hint of lemon. It's a dish where the chicken remains very juicy and has a flavor that will make you want to keep eating it. You can serve them with some white rice.
Place the chicken breasts inside a plastic bag and flatten them with a hammer or meat mallet.
Season the flattened breasts with salt and pepper to taste.
Heat the oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5 minutes on each side (until the chicken is well done). Remove the breasts from the skillet and keep them on a covered plate.
In the skillet, melt butter over medium heat. Add the garlic and sauté for 1 minute. Add the broth and bring to a boil. Cook until the broth has reduced by half, about 5 minutes.
Remove the pan from the heat and add the lemon juice.
On a serving platter, arrange the chicken breasts and pour the butter, garlic, and lemon sauce over them. Garnish with cilantro and lemon wedges.
