Nopal Tlacoyos

Nopal tlacoyos are a healthy option for a light meal in a dish high in fiber and protein.

  • 1 cup chicken breast, shredded
  • 1 cup lettuce, chopped
  • 1/2 cups tomato, chopped
  • 12 nopales, clean
  • 1/2 cups onion, in slices
  • 1/2 cups sour cream
  • 1/2 cups queso fresco, crumbled
  • 2 tablespoons vegetable oil
  • salt
  • 1/2 cups canned chipotle pepper

  • Heat a pan over medium heat, add the oil, chicken, chipotle pepper, tomato, and onion, season with salt and pepper. Let cook for 10 minutes.
  • Heat a griddle over medium heat and place the nopales, add salt and cook until they change color.
  • Place a nopal on the plate and add the chicken tinga, incorporate the lettuce and cheese. Enjoy.
