Parmesan Chicken Rolls

  • 4 ounces Philadelphia® cream cheese , softened
  • 10 ounces spinach, chopped
  • 1 1/4 cups Mozzarella cheese, reduced-fat
  • 6 tablespoons Parmesan cheese, shredded
  • 6 chicken breasts, boneless
  • 1 egg
  • 10 salty cracker, crushed
  • 1 1/2 cups tomato sauce, warm

  • PREHEAT the oven to 375ºF. MIX well the cream cheese, spinach, 1 cup of mozzarella, and 3 tablespoons of parmesan; spread the mixture over the chicken breasts. Starting at one short end of each breast, roll them up tightly. Secure with toothpicks, if desired.
  • BEAT the egg in a shallow dish. Mix the remaining parmesan and crushed crackers in another shallow dish. Dip the chicken in the egg and then coat it in the crumb mixture. Place it seam side down in a 13x9 inch baking dish, sprayed with cooking spray.
  • BAKE the chicken for 30 minutes or until cooked through (165ºF). Remove and discard the toothpicks, if used. Serve the rolls topped with spaghetti sauce and sprinkle with the remaining mozzarella.
