A delicious pre-Hispanic Tabascan recipe of pork in chili sauce with tomato.

  • kilos pork shoulder, in pieces

  • In a pot with a little water (ensuring to cover the meat), add half of the onion, the meat, and salt.
  • Meanwhile, soak the chiles in hot water, clean them, and roast them with half of the onion, the tomato, and the garlic. Blend everything together with the chicken bouillon cube.
  • When the water in which the meat is cooking is running low, add the blended mixture and let it simmer for about 10 minutes so everything mixes (the blended mixture and the meat). Adjust salt and pepper to taste.
  • Serve accompanied by white rice with corn kernels.
