Bacon-Wrapped Potato Cake

Do you like bacon? Then don't think twice and prepare this bacon-wrapped potato cake for lunchtime; you'll love it!

  • 5 potatoes, cooked
  • 20 slices smoked bacon
  • 1 cup white onion, chopped
  • 1/2 cups turkey deli ham, in cubes
  • 2 tablespoons chives, finely chopped
  • 1 cup cheddar cheese, grated
  • 1 cup Manchego cheese, grated
  • 3 tablespoons sour cream
  • butter
  • 1 cup cilantro, chopped
  • 2 cloves garlic, finely chopped

  • Slice the potatoes thinly and cook in a skillet over medium heat with butter, garlic, salt, and finely chopped onion.
  • Cook for 5 minutes until the potatoes are halfway cooked.
  • Add the bacon slices to a non-stick mold to create a bacon base, leaving some bacon at the ends so you can close it later.
  • Fill the mold with the potatoes we were cooking and all the skillet mixture, making sure the potatoes are well arranged.
  • Add the manchego cheese, cheddar cheese, green onions, sour cream, and ham.
  • Close the mold with bacon and bake at 180 °C for 10 minutes or until well browned.
  • Remove the bacon-wrapped potato cake from the oven and serve with a little fresh cilantro for garnish and accompaniment.
