Beans with Pork

Try this recipe for beans with pork. This dish clearly shows the Cuban influence in Yucatecan cuisine as it is a typical dish from Yucatán.

  • 1 kilo black beans
  • 1 kilo pork loin , in pieces
  • 1/2 kilos pork ribs
  • 2 sprigs epazote
  • 1 white onion , chopped finely
  • 1 tablespoon lard
  • 1 kilo tomato , peeled and chopped
  • 10 radishes, finely chopped
  • 3/4 cups fresh cilantro, chopped
  • 1 onion, finely chopped
  • 3 lemons, quartered

  • The beans are cleaned very well, washed, and placed on the heat in plenty of water in a covered pot.
  • When it starts to boil, reduce the heat to let it simmer for an hour. The pork is salted. When the beans are halfway cooked, add a tablespoon of salt and the epazote.
  • The onion is sautéed with the lard until it turns dark brown, then add the tomato and sauté it lightly, and add it to the beans along with the meat, allowing it to cook until the meat is very tender.
  • Beans with pork is served accompanied by rice, radishes, cilantro, and chopped onion, along with a small cup of bean broth to which cilantro, chopped onion, and chilitomate can be added to taste.
