Carnitas in Green Sauce

  • 1/4 kilos lard, for the carnitas
  • 1 kilo pork
  • 1/2 oranges, for the carnitas
  • 1 cup evaporated milk, for the carnitas
  • 1 cup orange juice, for the carnitas
  • 1 cup herb bundle, for the carnitas
  • 1/2 heads garlic, for the carnitas
  • coarse salt, for the carnitas
  • 1 tablespoon lard, for the sauce
  • 8 tomatillos, cut into quarters for the sauce
  • 1/4 onions, for the sauce
  • 5 serrano chiles, for the sauce
  • 1 clove garlic, for the sauce
  • 1 teaspoon cumin powder, for the sauce
  • 1 cup chicken broth, for the carnitas
  • 1 sprig fresh cilantro, for the sauce

  • For the sauce, in a saucepan heat the lard, fry the tomatoes, onion, serrano chili, garlic, and cook until the tomatoes change color. Then add the chicken broth and cilantro, cook for 5 more minutes, remove from heat, and let cool slightly. Blend and set aside.
  • For the carnitas, in a saucepan heat the lard, then add the meat, orange, evaporated milk, orange juice, herbs, garlic head, and coarse salt. Cook over medium heat for 90 minutes or until the liquid has evaporated.
  • Lightly fry the meat until golden brown, drain the excess fat, pour in the green sauce, and cook for 15 more minutes; season if necessary.
  • Serve very hot and accompany with finely chopped onion and cilantro leaves.
