Homemade Chicharrón Gorditas

1/2 onions, finely chopped
1 cup pressed pork rinds
1/2 kilos masa dough
2 cups lard, for frying
1/2 cups queso fresco, crumbled
1/2 cups onion, finely chopped, for serving
1/2 cups fresh cilantro, finely chopped, for serving
green salsa, for serving

Heat a skillet over medium heat, add the white onion, and cook until softened, add the pressed chicharrón and cook for 10 minutes. Cool and set aside.
Form balls of dough, make a hole in the center, and fill with chicharrón. Flatten the dough to make the gordita, forming a circle 8 cm in diameter.
Heat a small pot with lard, fry the gorditas until golden. Remove the gorditas and drain on paper towels.
Cut the gordita in half filled with cheese, onion, and cilantro. Serve with salsa. Enjoy!
