  • 1/2 onions, finely chopped
  • 1 cup pressed pork crackling
  • 1/2 kilos masa dough
  • 2 cups lard, for frying
  • 1/2 cups queso fresco, crumbled
  • 1/2 cups onion, finely chopped, for serving
  • 1/2 cups fresh cilantro, finely chopped, for serving
  • green salsa, to accompany

  • Cut the gordita in half and fill it with cheese, onion, and cilantro. Serve with salsa. Enjoy.
  • Heat a skillet over medium heat, add the white onion and cook until softened, then add the pressed pork cracklings and cook for 10 minutes. Cool and set aside.
  • Form small balls of dough, make a hole in the center, and fill with the pork cracklings. Flatten the dough to make the gordita, forming a circle 8 cm in diameter.
  • Heat a small pot with lard, fry the gorditas until golden brown. Remove the gorditas and drain on absorbent paper.
  • Cut the pressed pork crackling gordita in half and fill it with cheese, onion, cilantro, and salsa.
