Pork Cracklings in Red Sauce with Nopales

  • 1/4 onions
  • 1 clove garlic
  • 4 guajillo chiles, soaked and clean
  • 3 morita chiles, soaked and clean
  • salt

  • 6 cups pork rinds
  • 2 cups nopal, cooked

  • Grill the tomato, onion, and garlic for 5 minutes. Blend the ingredients in a blender and add the guajillo pepper, morita pepper, and salt.
  • In a pot over medium heat, heat vegetable oil and fry the sauce for 5 minutes, until it changes color; add the nopales and cook for 5 more minutes.
  • Add the chopped cracklings and heat for 5 minutes.
  • Serve with tortillas and enjoy.
