Sauté the chorizo in pieces in a skillet with butter and set aside.
Lightly grease a baking dish, add the cheese and half of the chorizo. Cover the dish with aluminum foil and place it over low heat until the cheese starts to melt (about 3 minutes). Uncover and cook for another 2 minutes or until the cheese completely melts. Place the remaining chorizo on top of the cheese.
Serve hot accompanied by flour tortillas so everyone can make their own tacos. It can also be served with a Mexican hot sauce.
