  • 50 grams lard
  • 1 kilo pork loin
  • 1 kilo pork ribs
  • 2 liters water
  • 500 milliliters orange soda
  • 1 corsage aromatic herbs
  • 3 allspice berries
  • 2 oranges, cut into quarters
  • 1 cup onion, chopped
  • 1 cup fresh cilantro, chopped
  • 1 cup red salsa, or green
  • 6 limes, quartered
  • salt

  • In a pot, heat the lard, seal the meat.
  • Add the water, soda, herbs, pepper, and orange until it reaches a boil.
  • Cover and let cook until the meat is tender and pulls away from the bone.
  • Let it cool.
  • Remove the pieces of meat from the cooking liquid and sauté a little in a non-stick skillet; no more fat is needed.
  • Chop the meat to assemble the tacos.
  • Serve with onion, cilantro, and any sauce of your choice.
