50 grams lard
1 kilo pork loin
1 kilo pork ribs
2 liters water
500 milliliters orange soda
1 corsage aromatic herbs
3 allspice berries
2 oranges, cut into quarters
1 cup onion, chopped
1 cup fresh cilantro, chopped
1 cup red salsa, or green
6 limes, quartered

In a pot, heat the lard, seal the meat.
Add the water, soda, herbs, pepper, and orange until it reaches a boil.
Cover and let cook until the meat is tender and pulls away from the bone.
Let it cool.
Remove the pieces of meat from the cooking liquid and sauté a little in a non-stick skillet; no more fat is needed.
Chop the meat to assemble the tacos.
Serve with onion, cilantro, and any sauce of your choice.
