Fried Green Plantain Tostones

Tostones are a representative dish of Venezuelan cuisine, specifically from the Zulia state, as it is there that the star ingredient, green plantain, is most harvested. This recipe for fried green plantain tostones is filled with pork and is accompanied by an exquisite avocado sauce.

  • 2 green plantains, for the tostones
  • vegetable oil, for the tostones
  • water, for the fried pork

  • 1 teaspoon baking soda, for the fried pork
  • 2 kilos pork belly, cut into pieces, for the fried pork
  • 1 avocado, for the guasacaca
  • 1/2 onions, for the guasacaca
  • 2 cloves garlic, for the guasacaca
  • 1 bunch cilantro, for the guasacaca
  • 1/4 bunches parsley, for the guasacaca

  • 1/2 cups green bell pepper, for the guasacaca
  • 1/2 cups red bell pepper, for the guasacaca
  • 1 tablespoon vegetable oil, for the guasacaca
  • 1 tablespoon vinegar, for the guasacaca
  • 2 tablespoons lime juice, for the guasacaca
  • salt, for the guasacaca
  • pepper, for the guasacaca
  • lettuce, to accompany
  • tomato, to accompany

  • Peel and cut the plantains into 3 parts. Set aside.
  • Heat vegetable oil over medium heat and fry the plantains for 3 minutes. Remove from heat and set aside.
  • Flatten the hot plantain with a tortilla press until you get a tostone of 15 cm in diameter. Set aside.
  • Fry the plantain again for 4 minutes until it is slightly crispy and firm. Add salt and set aside.
  • Add water, salt, and baking soda to a pot over medium heat, then cook the pork belly for 1 hour or until the meat is tender.
  • Cook the pork in a pan over medium heat with its own fat for 10 minutes or until golden brown. Set aside the fried pork.
  • For the guasacaca: blend the avocado, onion, garlic, cilantro, peppers, parsley, vinegar, lime juice, and season with salt and pepper.
  • Place one tostone, then add lettuce, fried pork, tomato, and guasacaca, then top with another tostone. Serve the fried green plantain tostones and accompany with a beer.
