  • 4 chipotle chiles in adobo sauce
  • 1 1/2 cups pineapple, chopped
  • 3/4 cups raw sugar
  • 1 cup pineapple juice
  • 1 cup bacon, finely chopped
  • 1/2 cups onion, finely chopped
  • 1/2 cups dried fruit, for stuffing
  • 1/2 cups Manchego cheese, cut into cubes

  • Preheat the oven to 180°C
  • Blend the chipotle with the pineapple, sugar, and pineapple juice until you obtain a smooth mixture.
  • In a skillet over medium heat, fry the bacon, when it is golden add the onion, pour in the pineapple sauce and cook for 10 minutes on low heat, until slightly caramelized.
  • Using a small knife, make incisions 3 cm deep in the leg. Stuff with dried fruits, cheese, season with salt and pepper.
  • Tie the loin with the help of hemp twine and place it on a baking tray. Brush with the sweet and sour pineapple sauce, cover with aluminum foil, and bake for 1 hour.
  • Remove the aluminum foil, baste with the juices, and bake again uncovered until the surface caramelizes. Let it rest before slicing and serve with mashed potatoes and salad.
