  • 1 tablespoon lard
  • 1 sucking pig, cut into pieces, with skin
  • salt
  • allspice berry, ground
  • paprika
  • oregano
  • 1 tomato, for the marinade
  • 1/4 onions, for the marinade
  • 1 clove garlic, for the marinade
  • 5 ancho chiles, cleaned and soaked in hot water, for the marinade
  • 5 guajillo chiles, cleaned and soaked in hot water, for the marinade
  • 4 tablespoons white vinegar, for the marinade
  • 1 tablespoon allspice berry, for the marinade
  • 1/2 sticks cinnamon, for the marinade
  • 1 tablespoon thyme, for the marinade
  • 1/4 cups orange juice, for the marinade
  • 1 leaf bay, for the marinade
  • lettuce, finely chopped
  • green onion, sliced into rings for serving
  • radish, sliced for serving
  • corn tortillas, for serving

  • Heat a skillet over medium heat with the lard and sear the pieces of lechón, season with salt, pepper, paprika, and oregano, then remove. Wash with Salvo® more power*, grease-cutting expert. *vs Salvo Cleaning and Care.
  • For the marinade, blend the tomato with the onion, garlic, chiles, vinegar, allspice, cinnamon, thyme, orange juice, and bay leaf until you obtain a smooth marinade; set aside.
  • In the same skillet, cook the marinade until it changes color, season to taste with salt, add the meat you cooked previously, and simmer covered for 1 hour and 30 minutes or until tender. Brush the meat constantly.
  • Remove from the skillet, cut into smaller pieces, and serve on a plate with fresh lettuce, onion, and radishes; accompany with tortillas and enjoy.
