Cook the Spanish chorizo in a skillet or on the grill. Once cooked, cover with a slice of manchego cheese. When the cheese is melted, remove from the skillet.
In the same skillet, sauté the peppers and onion with oil. Sprinkle a bit of pepper and salt. Serve as a side dish.
Prepare the hot dogs, first the bun, then the chorizo with the melted cheese. Serve.
