Hot Dogs 4 Ways

  • 1/2 cups white onion, finely chopped, for choriqueso
  • 1 serrano chile, finely chopped, for choriqueso

  • 1/4 cups pico de gallo, to serve, for choriqueso

  • 1/8 cups white vinegar, pastor hot dog marinade
  • 2 guajillo chiles, cleaned and deveined for pastor hot dog
  • 2 ancho chiles, cleaned and deveined for pastor hot dog
  • 1 tomato, grilled, pastor hot dog
  • 1 tablespoon achiote, for pastor hot dog
  • 1/2 onions, for pastor hot dog
  • 1/2 teaspoons cumin, for pastor hot dog
  • 3 cloves, for pastor hot dog
  • 1/4 cups pineapple juice, for pastor hot dog

  • Governor Hot Dog: Heat a skillet over medium heat with butter, cook the onion with the strips and shrimp, season with oregano, salt, and pepper. Add the manchego cheese and cook until melted. Set aside.
  • Wrap the sausages with bacon and cook in a grill pan over medium heat along with the bread.
  • On a board, place the warm bread and spread with beans, guacamole, place the sausage and serve the shrimp. Accompany with a little sauce.
  • For Choriqueso Hot Dog: Heat a cast iron skillet over medium heat, cook the chorizo until it releases some fat, add the onion, serrano chili, asadero cheese, and cook until melted and incorporated with the ingredients. Adjust seasoning and set aside.
  • Heat a grill over medium heat and heat the sausage with the bread, set aside, serve your hot dog with the sausage, add the choriqueso preparation, accompany with pico de gallo and whole black beans on top. Enjoy.
  • In a bowl, marinate the sausages with the pastor marinade for 15 minutes and set aside. For the pastor marinade, blend the white vinegar with the chiles, tomato, achiote, onion, garlic, cumin, cloves, pineapple juice, and salt to taste.
  • Heat a grill over high heat and cook the sausages along with the bread, set aside.
  • Serve your hot dog with pastor sausage, pineapple, cilantro, white onion, green sauce and enjoy.
  • For Sonora Hotdog: Place the sausage inside the cleaned and deveined chili, wrap in bacon and yellow cheese. Heat a grill pan over medium heat and cook the chiles with the sausage and bread.
  • On a board, spread the bread with guacamole, fill the bread with the chili, serve the onions on top, the fried potatoes, and accompany with mayonnaise, mustard, and ketchup.
