These delicious hot dogs are served with chipotle mayonnaise and tropical mango sauce. This mango sauce is delicious and includes chili, cucumber, cilantro, and red onion.
Mix 3 tablespoons of lemon juice, mango, red onion, cilantro, ginger, and serrano chili. Add salt and mix well. This can be prepared a day in advance and reserved.
Prepare the chipotle mayonnaise by mixing half a cup of regular mayonnaise with 1 tablespoon of adobo chipotle pepper juice. Add a little lemon and salt if necessary.
Place the sausages on a hot grill and cook until well done (about 5 minutes on medium heat)
Heat the bread on the highest part of the grill so it warms up a bit. (Be careful, as it can toast too quickly)
Spread chipotle mayonnaise on the hot dog bun, add the sausage, serve with the mango sauce on top, and diced avocado.
