Cider Pork Leg

  • 4 cups cider
  • 1 cup apple juice
  • 1/2 cups orange juice
  • 3 cloves garlic
  • 1 onion
  • 1 tablespoon cinnamon powder
  • 3 tablespoons rosemary
  • 1 tablespoon thyme
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 pork leg, boneless, 2-3 kg
  • 1 cup butter, at room temperature
  • 3 red apples, cut into wedges
  • 3 green apples, cut into wedges
  • 1 cup apple jam
  • cherries, for decoration
  • orange, or another fruit, sliced, for decoration
  • rosemary, fresh, for decoration

  • Preheat the oven to 200° C.
  • Blend the cider with the apple juice and orange juice, garlic, onion, cinnamon, rosemary, thyme, salt, and pepper until you get a homogeneous mixture. Set aside.
  • On a cutting board, cut the outer layer of the leg into diamonds, season with salt and pepper. Spread the butter all over the surface until completely covered and place in a baking dish.
  • Arrange the apples, cover with the cider mixture, cover with aluminum foil, and bake for 30 minutes.
  • Remove the leg from the oven, uncover, and with the help of a brush, glaze the entire piece with apple jam. Bake again for 40 minutes, uncovered, constantly basting with the juices and the jam.
  • Remove from the oven, let it rest for a few minutes before slicing, and serve the leg decorated with cherries, orange, rosemary, and the apples from the cooking.
