  • 1 pork leg
  • 2 tablespoons fresh cilantro, chopped
  • 2 cloves garlic
  • 4 teaspoons chicken bullion
  • 2 ancho chiles
  • 1/4 cascabel chiles
  • 1/4 morita chiles
  • 1 guajillo chile, large
  • 1/2 onions
  • 1 pinch thyme
  • 1 pinch pepper
  • 1 pinch cumin
  • 1 pinch clove
  • 1 stick unsalted butter
  • 1/2 cups vinegar

  • Clean all the chiles, soak them in water along with vinegar, garlic, onion, cloves, pepper, oregano, thyme, cumin, and cilantro.
  • Blend the ingredients from the first step and marinate the leg with this sauce. Let it marinate in the refrigerator overnight.
  • Preheat the oven to 180°C. Cover the leg with butter.
  • Cook it by covering it and basting it with the same sauce, turning it every half hour. Cook for 1 hour and 20 minutes.
  • Serve.
