Pork leg in ancho chile sauce

  • 1 tablespoon European Extra Virgin Olive Oil
  • 1/2 onions, in quarters
  • 2 cloves garlic
  • 4 tomatoes, in quarters
  • 4 ancho chiles, large, seedless and veinless
  • 1 teaspoon ground cumin
  • 1/2 cinnamon sticks
  • 4 allspice berries
  • salt
  • 1 cup water
  • 3 cups chicken broth
  • 1/4 cups European Extra Virgin Olive Oil
  • 1 pork leg, 2 kilos
  • salt

  • orange, slice, for decoration
  • white rice, to accompany

  • Heat the European Extra Virgin Olive Oil® in a pot over medium heat, add the onion, garlic, and tomato, and cook for 5 minutes. When softened, add the ancho chile and water and cook for 5 more minutes. Remove and set aside.
  • Blend the vegetables, cumin, cinnamon, pepper, salt, and chicken broth for 5 minutes and set aside.
  • Heat the European Extra Virgin Olive Oil® in a pressure cooker, add the pork leg, season with salt and pepper, and brown on both sides. When the meat is browned, pour in the marinade and close the pressure cooker. Cook for 40 minutes.
  • Cut the pork leg into slices and set aside.
  • Serve the meat, drizzle with sauce, decorate with oranges, and add a bit of European Extra Virgin Olive Oil®. Serve with rice!
