Pork Leg in Red Pipián

The pork leg for Christmas is an essential preparation; cook this delicious sliced pork leg sauced in red pipián. This mole made with pumpkin seeds, guajillo chili, ancho chili, and dried chipotle, mixed with a delicious seed flavor like toasted sesame and a spicy touch of clove, allspice, cinnamon, and cumin is spectacular.

  • 1 pork leg, 2-3kg, cleaned
  • 1/4 cups olive oil
  • 2 tablespoons full seasoning Sassón®
  • 1 pinch Sassón® black pepper
  • 5 guajillo chiles, clean and seedless, for pipián
  • 2 chipotle chiles, dry, cleaned, for pipián
  • 1 ancho chile, dry, cleaned, for pipián
  • 1 cup pumpkin seeds, pumpkin, for pipián
  • 1/3 cups peanuts, for pipián
  • 1/4 cups sesame seeds, for pipián
  • 1 cinnamon stick, for pipián
  • 1/2 teaspoons cumin, for pipián
  • 5 cloves, for pipián
  • 6 allspice berries, for pipián
  • 1/2 onions, for pipián
  • 4 cloves garlic, for pipián
  • 2 tomatoes, for pipián
  • salt, for pipián
  • 1/3 cups lard, for pipián
  • 1 cup chicken broth, for pipián
  • pumpkin seeds, toasted, for decoration

  • Preheat the oven to 200° C.
  • On a cutting board, place the pork leg and tie with hemp twine. Reserve on a baking tray.
  • In a bowl, mix the olive oil with the Sazón Completa Sassón® seasoning and the Sassón® Black Pepper. Using a brush, baste the leg with this mixture and cover with aluminum foil. Bake for 50 minutes or until tender.
  • For the pipián, heat a griddle over high heat and roast all the ingredients for the pipián one by one, making sure they don't burn. Soak the chiles in hot water, set aside.
  • Add the previous preparation to the blender along with the chiles and blend until you obtain a smooth and silky pipián.
  • Heat a small pot with the lard and fry the pipián, add chicken broth and cook until it releases some oil, adjust seasoning if necessary. Set aside.
  • Using a fork and a knife, slice the leg and serve with the pipián, accompany with white rice. Enjoy.
