Shredded Leg

  • 2 kilos leg, boneless pork leg
  • 18 dried guajillo chiles
  • 4 ancho chiles
  • 4 cloves garlic
  • 5 grams oregano
  • 1 stick cinnamon
  • 1/2 tablets chocolate, table
  • 10 pepper, fat
  • 250 milliliters apple cider vinegar
  • 25 grams coarse salt
  • 3 carrots
  • 2 potatoes
  • 100 grams bacon, sliced
  • 100 grams prunes, boneless

  • Soak the chiles in the apple cider vinegar and stir well. Set aside.
  • Peel the potatoes and cut them into sticks.
  • Peel the carrots. Cut them into sticks.
  • Blend the chiles with the apple cider vinegar, the chocolate tablet, the garlic, the allspice, the oregano, the coarse salt, and the water. Set aside.
  • Shred the leg with the carrot sticks, the potato, the bacon, and the prunes. Tie with hemp thread.
  • Place the leg in a container with herbs and sprinkle with cinnamon. Add water and cover with aluminum foil. Bake at 180° C for 50 minutes.
  • Remove the cinnamon stick and the thread, sauce the leg. Bake for 10 more minutes; sauce again and bake for another 10 minutes. Decorate with herbs and serve.
