Soak the chiles in the apple cider vinegar and stir well. Set aside.
Peel the potatoes and cut them into sticks.
Peel the carrots. Cut them into sticks.
Blend the chiles with the apple cider vinegar, the chocolate tablet, the garlic, the allspice, the oregano, the coarse salt, and the water. Set aside.
Shred the leg with the carrot sticks, the potato, the bacon, and the prunes. Tie with hemp thread.
Place the leg in a container with herbs and sprinkle with cinnamon. Add water and cover with aluminum foil. Bake at 180° C for 50 minutes.
