  • 1/8 cups white vinegar, for pastor marinade
  • 2 guajillo chiles, for pastor marinade
  • 2 ancho chiles, for pastor marinade
  • 1 tomato, grilled, for pastor marinade
  • 1 tablespoon achiote, for pastor marinade
  • 1/2 white onions, for pastor marinade
  • 1/2 tablespoons cumin, for pastor marinade
  • 3 cloves, for pastor marinade
  • 1/4 cups pineapple juice, for pastor marinade
  • salt, for pastor marinade
  • 1 kilo pork, steak, cut into small pieces
  • vegetable oil, to cook the meat and fry the tortillas
  • 1 kilo corn tortillas
  • 3 cups asadero cheese
  • 1 cup pineapple, cut into cubes
  • 1/4 cups fresh cilantro, finely chopped
  • red onion, sliced
  • white onion, sliced

  • Preheat the oven to 180° C
  • Blend the marinade ingredients until you obtain a paste, pour over the meat and marinate for 2 hours. Set aside.
  • Heat a skillet over medium heat with the oil and cook the pork with the marinade, seasoning with salt.
  • Heat the oil in a skillet over medium heat and lightly fry the tortillas, removing excess fat with paper towels.
  • In a baking dish, place a layer of tortillas, the pastor, pineapple, cheese, and repeat the process until the dish is full; on the last layer, add a layer of cheese, pineapple, and bake to gratinate the cheese for about 20 minutes.
  • Remove from the oven and decorate with cilantro and onion. Serve hot.
