First, we season the chops with salt and let them marinate with the soy sauce for 1 hour.
In a pan, we melt the lard, and when it's hot, we fry the chops on both sides, then remove them. Set aside.
For the sweet and sour sauce: We use the same pan, just remove a little bit of lard and add the broth, vinegar, soy sauce, and sugar, stirring well. Let it cook for 10 minutes on low heat.
Then we increase the heat, add and mix the cornstarch and wine until it boils, then remove the pan from the heat.
